Taste Profile & Parings

Opus Classic tastes and smells fresh and pleasant. It is a medium intensity olive oil that is exceptionally well balanced.

Made from the elegant Koroneiki variety this oil has aroma notes of green almond, fresh green grassy herbs such as dandelion, artichoke, green tomato and green apple. (A representation of the aroma profile can be seen on the bottle labels.)

On the palate its gold-standard balance results in a sensation that doesn't feel overly bitter or acrid, "oily" or heavy, compared to other olive oils. In the finish there is the characteristic lively pepperiness of the high polyphenols. Again, the good balance of the oil does not allow pepperiness or bitterness to become overpowering. It is these characteristics that have led to the many industry awards Opus has achieved over the years.

Having achieved this superior result not only by expert management of our olive groves and perfectly timing the olive harvest, but also by applying precise milling practices, this olive oil has a wide range of applications both raw and in cooking.

With a smoke point of at least 210 degrees Celsius it is good to cook with in all home applications (stove-top cooking, roasting, baking, shallow frying) except for deep fat frying.

Lab Certification Results

Laboratory testing is the most reliable way to quantify the quality of extra virgin olive oil, beyond taste alone. We lab-test every batch because:
- It helps confirm you’re getting truly high-quality olive oil.
- It’s part of our mission to contribute to a more transparent food industry.

This extra virgin contains 632mg/kg of total polyphenols.

A copy of our detailed lab results can be found in the pictures section of our products.

Harvest Details & Sustainable Practices

Opus olive oil embodies the essence of our region Messinia, with its varied mountainous landscape that is kissed by the sea and drenched by life-giving sun.

This olive oil is from the most recent harvest in October 2025.

In our olive grove we have gone a lot further than just using organic practices, which mainly only focus on what is not used (ie. synthetic pesticides, herbicides, fertilisers).

We use sustainable practices relating to soil conservation, water management, nutrient cycling through composting, ecosystem biodiversity enrichment and renewable energy use. We continuously improve the sustainability of our groves further.

Our ongoing investment in these practices improves the resilience of the olive groves and their long-term viability.

We farm organically to the stringent EU standards without any synthetic or chemical "cides".

Where can I find the lab tests for your olive oils?

On each product page you will see a screenshot of our lab test results. We lab test our oils every new harvest.

Is extra-virgin olive oil suitable for high-heat cooking?

Yes! A 2018 study in Acta Scientific Nutritional Health found that oxidative stability and low polyunsaturated fat content matter more than smoke point. In their study, EVOO produced the fewest harmful by-products when heated, outperforming oils like sunflower, rapeseed, corn and soybean oil.
Opus is suitable for all raw applications and for all home cooking processes (stovetop cooking, roasting, baking, shallow frying etc.) except for deep fat frying.

How should I store my olive oil?

Olive oil should be stored in a dark, cool place to preserve its quality and freshness. The optimal temperature range is between 14 ºC and 25 ºC. Extra virgin olive oil solidifies at a temperature of 7 ºC. Do not refrigerate or freeze your olive oil. Keep out of the sun.

Do you offer free shipping?

Yes, deliveries are FREE for orders over £50 to a U.K. mainland address or over £60 to addresses in Scotland or Northern Ireland.

Where do you ship to?

We currently ship all over the UK. We are working on expanding our shipping capabilities to other countries. If you are interested in our products and live outside of the United Kingdom, please contact us.

Is it a first cold press olive oil?

Yes it is! "First cold press" refers to mechanically pressing olives at temperatures under 27°C (80°F) during the first extraction, which preserves flavour, nutrients, and antioxidants. Modern high-quality extra virgin olive oil is already made this way by default. We take great care to press our olive oil at below 25°C for better results. It is also fresh (recent early harvest date), single origin (not blended), and lab-tested for quality and transparency.
