An unprocessed sea salt harvested in the largest natural reserve in Greece, Messolonghi, which is also the largest natural reserve in the wider region and an environement untouched by pollution.
No bulking agents, flow improvers or anticaking agents are added to this salt. There is therefore no bitter aftertaste in Opus fleur de sel. A little of it goes a long way as, because of the absence of chemical bulking agents, it tastes saltier than other salts. It is entirely as nature created it, through a slow evaporation process of the seawater in the saltpan, only through the sun rays and the wind.
Richer in minerals such as magnesium, potassium, calcium, iodine and other trace minerals than other types of salt, it has a lovely soft and rounded taste. It is carefully harvested by hand with special tools, only from the surface of the salt pan, never having touched the bottom and mixed with soil or debris.
A delicate gourmet product, it has a lovely texture that is crystalline and like a dried snowflake. It lends any dish a distinctive flair and makes a wonderful finishing salt over grilled vegetables or barbecued steaks and fish. It works great in desserts such as chocolate mousse and salted caramel. Makes a perfect salty rim for margaritas and other cocktails. The uses are endless!
