We are big fans of colourful veggies and here is one of our favourite fresh winter salads of happiness and vitality. It is packed with antioxidants, healthy fats, vitamins, minerals and much needed fibre. Look at those colours: deep purple mixed with bright orange and flashes of green and red. Juicy, tasty, vibrant and so good for you! It always makes us come back for more!
INGREDIENTS(serves 2 as a side or 1 as a main)
1/2 of a small head of red cabbage, stalk removed and finely shredded
1 large carrot, peeled and shredded
2 medium oranges (1 for segmenting and one for juicing and zesting)
3 tbsp Opus oléa extra virgin olive oil
1 tbsp cider vinegar
sea salt flakes, to taste
2 spring onions, chopped (greens included)
1 cup pomegranate seeds
METHOD
Make the dressing by whisking the olive oil with the fresh orange juice, orange zest and the salt.
Place the finely shredded red cabbage, the chopped spring onions and the shredded carrot in a bowl and toss. Add the dressing and toss again. carefully place the orange segments in the bowl and gently intermix. Serve on plates or in bowls and garnish with more spring onion rounds and the pomegranate seeds.
